Japanese Waterstones - Toishi Ref: J-TK

In Japan, the importance of correct sharpening is given high status as the Japanese reason that perfect work can only be accomplished with a perfectly sharpened blade. It is not just the quality of Japanese tools that excite craftsmen but also the quality of the sharpening. Japanese edge tools, chisels, planes, kiridashis etc. are honed exclusively on special Japanese waterstones.

These man made sharpening stones are available in grits 800 to 6000 with the special option of the combination 1000/6000 stone.
800 grit stones are for preparatory work on dull or damaged edges working through to the hard 6000 stones which are for finishing.
The soft stones act very quickly and will wear relatively quickly. They need to be immersed in water for 15 minutes before first use (until the bubbles stop) in order to saturate the stone. They can be kept in water or re-immersed when required. The finishing stones - 6000 grit can be spinkled with water and do not need to be immersed for any length of time.

The stones can be flattened on a flat surface (e.g. glass) using sandpaper after they have been dried out.
